Mango rice - Enjoy this mango rice with yummy cashews and peanuts...
Ingredients:
Cooked rice:1 cup
Raw mangoes:2
Grated coconut:3 tbsp
Bengal gram dhal:2 tsp
Urad dhal:1 tsp
Sesame seeds:3 tbsp
Raisins:2 tsp
Fenugreek seeds:1/4 tsp
Red chillies:3
For tempering:
Oil:3 tsp
Mustard seeds:1 tsp
Asafoetida powder:1/4 tsp
Curry leaves:few
Salt to taste
Ground nuts:1 tbsp
Cashew nuts:8 to 10
Preparation:
Peel the raw mangoes and cut them in to ½ inch pieces…
Dry roast the grated coconut,bengal gram dhal,urad dhal,sesame seeds,fenugreek seeds and red chillies till light brown and powder these in a mixer…
Take oil in a pan and fry the groundnuts and cashews till golden brown and keep this aside..
Heat the same oil and add mustard seeds..
When it crackles add asafoetida powder and fry for a minute..
Then add the curry leaves and the mango pieces and saute for a minute or so…
Add the powdered masala,salt and mix well..
Finally add the cooked rice and mix well to coat evenly with the masala..
Add the ghee fried cashews and the ground nuts to the rice..
Yummy and tasty mango rice is ready!
