Spiced cashewnut curry makes a yummy treat with hot rice or parathas..
Cashew nuts:250 grams
Coriander seeds:1 tsp
Cumin seeds:1 tsp
Cooking oil:1 tbsp
Green chilli:1,deseeded and chopped
Cinnamon stick:1 cm
Turmeric powder:1/2 tsp
Coconut cream:4 tbsp
Vegetable stock:300 ml
Salt to taste
Soak the cashew nuts in cold water over night..
Crush the coriander seeds,cumin seeds and the cardamom pods in a mortar with the help of a pestle..
Heat oil in a frying pan and stir fry the onion till golden..
Add the chopped chilli,crushed spices,cinnamon and turmeric powder and stir fry for a few minutes…
Add the coconut cream and the hot vegetable stock to the pan..
Bring this to a boil and then add the cashew nuts..
Finally add the salt and pepper..
Cover the pan and lower the heat and simmer for 20 minutes..
Serve hot with rice!
