Zucchini and red pepper frittata makes a yummy dish...
Ingredients:
Turkey bacon:2 slices,cut in to 1 inch pieces
Onion:1/2 cup
Mushrooms:2 cups,sliced
Red bell pepper:1 cup,chopped
Fresh basil:1 tbsp,chopped
Zucchini:sliced,1/4 inch inch thick
Salt to taste
Pepper to taste
Eggs:2
Cheese:1/2 cup,grated
Preparation:
In a large pan,cook the bacon over medium heat until it is lightly browned..
Remove the bacon with a slotted spoon and drain all but 1 teaspoon of the bacon fat from the pan..
Add the onion to the pan and cook for 2 more minutes..
Add the zucchini and basil and cook until the vegetables are soft..
Season with salt and pepper powder..
Now pour the eggs in to the pan and cook for 5 minutes…
Sprinkle the cheese over the top of the frittata…
Cover and cook until the cheese is melted for about 2 minutes..
Remove from heat and slice in to 5 or 6 wedges…
Enjoy the zucchini and red pepper frittata..
